Japanese Omelette Rice (Omu Raisu)

Ingredients:

Cooked rice (preferably left over rice)

Chopped Onion

Chopped Carrots

Ground pork or beef

Chopped Spam, hotdog or bacon

2 Eggs (per serving to completely cover rice)

Ketchup

Olive oil

Salt and pepper

I don't measure anything, we filipinos use 'approximate measures' and judge our tongue. I also don't chop, I slice everything then put in food processor separately and ground them 3-5 seconds.

Using your hands crush hardened left over rice. Heat the frying pan in medium heat, put some oil good enough to saute everything including rice. When the oil starts to produce smoke, put the onion until it turned brown. Put the ground meat, when cooked put the spam or bacon or hotdog. Finally put the carrots then rice and keep on stirring until they are all mixed together. While stirring start to put salt and pepper in small amounts, taste, add some more if needed. Remember, little by little you wouldn't want it salty or spicy. Lastly, put ketchup in moderate batches, good enough to turn everything into red orange. Set aside.

In a bigger frying pan heat 1 spoon of olive oil, spread the 2 beaten eggs all over the pan. When the egg starts to harden put some rice mixture in the middle. Lightly turn the right side of the egg towards the mixture going to the left side completely covering it. Carefully turn the egg together with the mixture on the left side again. Transfer the omelette rice in a plate and put a ketchup on top. Use your imagination in creating character or any figure. Kids would love it. Heart, kiss, i love you ketchup is a good presentation for your loved ones.
